Join Micah Mortali, Chef Jeremy Rock Smith, and local expert and chef Katerina Askeliou for a week-long immersive journey in Greece that is more than a culinary and outdoor adventure—it’s a reconnection to nature’s abundance and ancient wisdom.
Guided by this passionate team, you’ll step away from the fast-paced modern world for one week and reconnect with nature at Odyssey Eco Glamping and Eco Farm, where you’ll explore how the ancient Greeks lived in harmony with the land, uncover the evolution of their gastronomy, and create meals that honor the environment and its gifts.
You’ll start your mornings with mindfulness practices and nature-based activities led by Micah, deepening your connection to the land. From there we’ll forage treasures from the land and sea—wild greens, fresh seafood, herbs, honey, and olives—while discovering the timeless rhythms of Greek nature and culture. In the afternoon, under the expert guidance of Katerina & Jeremy learn how to transform local ingredients into traditional dishes that capture the flavors of the sun, sea, and history.

Meet Your Hosts
MICAH MORTALI
Micah Mortali, MA, is a visionary leader and expert in mindfulness, rewilding, and nature connection. He is the Founding Director of the Kripalu School of Mindful Outdoor Leadership, a pioneering training program that certifies mindful outdoor guides to lead experiences that promote deep connection, awe, and healing in the natural world. Micah's passion and dedication to his mission have inspired countless individuals to realize their full potential and experience the transformative power of nature. He is the author of the book Rewilding: Meditations, Practices, and Skills for Awakening in Nature, which found its way onto the International Space Station in 2022 and profoundly impacted US astronaut Colonel Mark T. Vande Hei's record-breaking mission.
Micah holds a Master's degree in Health Arts and Sciences from Goddard College and is deeply committed to the belief that humans are a self-aware expression of the living earth. He recognizes that our future depends on recognizing this truth and rekindling our communication with the systems that sustain life on this planet. Micah lives in the Berkshires with his wife and children, where he embraces the great outdoors and spends time listening to the Earth, sitting by a fire, or enjoying the sounds of a brook.
Chef Katerina SAKELLIOU
Katerina Sakelliou is a chef from Poros, Greece, who grew up learning to cook in her family's restaurant, Spiros. Following generations of culinary tradition, she honed her skills through hands-on experience and later expanded her expertise with courses at renowned restaurants in Holland, including a Michelin-starred location.
Since the mid-2000s, she has been teaching Greek cooking workshops at her bistro on Poros Island, welcoming guests from around the world. Katerina's approach to cooking reflects her deep respect for family traditions, the environment, and the connection between food and culture. Her passion is rooted in a lifelong commitment to sharing the love of Greek cuisine.
Chef Jeremy ROCK SMITH
Chef Jeremy Rock Smith, known for his lighthearted humorous approach to cooking, is a culinary expert who transitioned from the fast-paced world of traditional cooking to a path centered on nourishment, mindfulness, and longevity. After stepping away from the restaurant industry during a “midlife cooking crisis,” Jeremy embraced food’s power to heal—not just through eating, but through the act of cooking and serving.
With over 20 years spent at Canyon Ranch, Kripalu Yoga Center, and Miraval Resort, Jeremy has blended classical training with principles of wellness, Ayurveda, and Blue Zones. Inspired by a culinary trip to Greece, he now shares his passion for longevity-focused living through retreats, workshops, and his best-selling cookbook, The Kripalu Kitchen: Nourishing Food for Body and Soul.

Your journey begins as you arrive by water taxi at Odyssey Eco Glamping. After you settle into your surroundings and take in the natural beauty of Galatas and its majestic view of Poros, you’ll gather with fellow participants for a warm welcome dinner. This meal, crafted with locally sourced ingredients, introduces you to the essence of Greek cuisine and sets the stage for the meaningful connections—to nature, culture, and each other—that will define the week ahead.

After a traditional Greek breakfast, we’ll take a water taxi to Poros and step into the heart of the forest as we hike its ancient footpaths, immersing ourselves in the island’s deep connection to the land. Along the way, we’ll learn about the sacred pine trees, whose resin, known as the “Tear of the Pine,” has been used for centuries in traditional practices.
As we continue our journey, we’ll gather wild greens, still staples of the local diet, and discuss how they’ve nourished the people of this region for generations. At midday, pause for a picnic lunch on a hilltop overlooking the Aegean Sea, where the sweeping landscape provides the perfect backdrop for a conversation on the evolution of the Greek diet and its intimate ties to the land.
Returning to Odyssey Eco Glamping, you may take time to relax by the beach or rest in a hammock under the olive trees. In the late afternoon, we’ll come together in the kitchen to transform the ingredients we’ve foraged into traditional Greek dishes, celebrating the day’s harvest with a communal dinner under the stars.

The day begins after breakfast with a guided walk through the farm at Galatas, a region abundant with fruits, trees, and herbs deeply rooted in the Mediterranean lifestyle. We’ll delve into the symbiotic relationship between the land and the people who have cultivated it for centuries. This connection is the foundation of the Mediterranean diet, celebrated not only for its health benefits but for its sustainability and respect for nature.
From there, we’ll head to the shore, where we’ll gather treasures from the sea, such as sea urchins, barnacles, and wild sea greens. These ingredients, sourced from Poros’ pristine waters, are a testament to the abundance the natural world provides when cared for responsibly.
After lunch, choose to embark on a fishing trip or simply relax amidst the serene beauty of the land. In the evening, we’ll gather for a cooking session, where the vibrant flavors of the farm and sea come together in homemade pies filled with wild greens, onions, and freshly made feta cheese.

Travel to the ancient sanctuary of Epidaurus, a place where the connection between health, diet, and nature was understood as a holistic practice. This sacred site, dedicated to Asclepius, the god of medicine, reveals the ancient Greeks’ wisdom in blending body, soul, and environment for well-being.
On a guided tour, we’ll explore the historical prescriptions offered to visitors, including dietary recommendations rooted in the local harvests. Over a picnic meal inspired by these traditions, we’ll reflect on how this ancient understanding of food as medicine remains relevant today. The outing concludes with a visit to a cheese dairy in Trachia, where we’ll learn about the timeless craft of cheesemaking, a skill that harmonizes the bounty of the land with human ingenuity.

We'll spend the day on the farm for a day dedicated to honoring the gifts of the land. Begin with an exploration of herbs, celebrated in Greek culture for their culinary and medicinal properties. Learn to craft sourdough bread, using methods perfected by those who relied on preservation to honor the cycles of nature.
Seasonal fruits, such as oranges and lemons, take center stage as we dive into jam-making, fruit-drying techniques, and the preparation of olive leaf tea—a tribute to the wisdom of sustainable living. In the afternoon, a hands-on cooking workshop focuses on honey and cheese, combining these quintessential Greek ingredients into dishes like feta-stuffed vine leaves and vibrant horta (wild greens).
The day also includes a visit from a local beekeeper, offering a chance to connect with the delicate balance of ecosystems that sustain life. Through a honey tasting, you’ll experience how even the smallest creatures are integral to the rich flavors of Greek cuisine.

Today we embark on a journey to the Methana Peninsula, a land shaped by volcanic activity and steeped in natural beauty. A guided hike to the summit of Methana’s famed volcano offers sweeping views of the landscape, a reminder of the earth’s power and its role in shaping the region. Following the hike, rejuvenate with a swim in the healing thermal springs, which locals have used for centuries to restore both body and spirit.
Along the way, visit the wetlands of Psyfta, an ecological treasure where early forms of aquaculture flourished. The day also takes us to the lemon forest of Trizina, where the fragrant citrus groves stand as a testament to the land’s generosity and its importance in Greek culinary traditions.

This free day invites you to reflect on the week’s journey and your personal connection to the land. Begin with optional mindfulness activities or introspection, led by Micah, followed by an afternoon hike to the Sanctuary of Poseidon or quiet exploration of the island’s beaches and villages.
In the evening, we’ll gather for a final celebratory meal, designed to capture the essence of everything we’ve learned and shared. With dishes inspired by the land, sea, and our week of discovery, the meal will honor the connections we’ve made—to each other, to the food, and to the environment that has nurtured us.

The cancellation policy offers a full refund of the $1499.00 deposit up to 7 days from booking. After 7 days the deposit is non refundable and may used as a credit for a future booking.
Final Payment is due 60 days prior to departure (February 11, 2025).

• 30–59 Days Before Departure: Refund minus the deposit amount.
• Less Than 30 Days Before Departure: No refundable
Cancellation by Organizer: Full refund within 30 days of cancellation notice, including the deposit.

Refunds: Refunds will be processed to the original form of payment within a 7-10 business days following the effective date of cancellation. A $100 administrative fee will be incurred.

Transfer to Poros Island from the Port of Piraeus by ferry is included in the trip.
We will provide you with detailed travel instructions within 7 days of booking, including guidelines for booking flights to Athens that align with ferry schedules to ensure a smooth transfer to the island.

We recommend packing comfortable clothing suitable for outdoor activities, swimwear, sun protection, a hat, and sturdy shoes for hiking. A more detailed packing list will be provided closer to the departure date.

The retreat package covers most expenses, but you may want to bring extra money for personal expenses, optional activities not included in the itinerary, souvenirs, or additional beverages outside of meals provided.
